    Capellini Cold Asian Noodles

    Ingredients:

    3 tbsp. jovial olive oil

    1 pint cherry tomatoes, halved

    1 medium zucchini, chopped

    2 tsp. cane sugar

    1 small red onion, diced

    1/2 cup green olives

    1/2 cup basil leaves

    1 thinly sliced cucumber

    1/2 cup goat cheese

  • In a large skillet, heat the olive oil. Add the tomatoes, zucchini, and onion and saute on medium heat for 4-5 minutes until the vegetables soften. Toss in the olives and basil and transfer to a large serving dish.
  • Cook the pasta according to package instructions. Before draining the pasta, remove 1/4 cup of the pasta cooking water and mix together with the goat cheese until creamy.
  • Toss the spaghetti and goat cheese with the tomato mixture and serve.
  • Cooking Time: 10 minutes

    Bring 3 quarts of water to a rolling boil. Add salt as desired. Cook on high, stirring frequently. Test for doneness and drain.
