Fermented whole soy with no grain added. Eden Tamari is traditional, koji brewed over two years. Only natural (non-artificial enzyme) brewing can create wonderful soy sauce. Tamari was originally a liquid from making miso. Now it is mash brewed, but retains miso flavors. It is not a substitute for shoyu, which has added barley or wheat. Shoyu enhances flavors, but does not flavor food. Eden soy sauce is easy-to-assimilate fermented vegetable protein or FVP.
Whole organic soybeans, water, sea salt, organic soybean flour, koji aspergillus oryzae, and alcohol to preserve freshness.
